Ingredients & Substitutions
- Tortellini: I love how this dish is made in one pot! I used fresh cheese tortellini, which cooks right in the same pot with the other ingredients. While I opted for cheese tortellini, you could easily swap it for other varieties like spinach, mushroom, or even a meat-stuffed tortellini.
- Ground Beef: The ground beef is cooked with diced yellow onion, then seasoned with hamburger seasoning, salt, and pepper for that classic burger flavor. Or, if preferred, try using ground chicken or ground turkey.
- Red Pepper Flakes: For a little kick to each bite, I added a few red pepper flakes (also called crushed red pepper). If you want a milder dish, leave them out. Or, add more for a spicier kick!
- Beef Broth & Heavy Cream: The beef broth and heavy cream (heavy whipping cream) are used to make the sauce creamy and flavorful. If you don’t have beef broth, you can use chicken broth or vegetable broth. For the heavy cream, you can substitute it with half-and-half or milk.
- Tomatoes: I added a can of petite diced tomatoes (drained) to the sauce. They are small enough to blend in nicely. But, if you don’t mind larger pieces, regular diced tomatoes would work. Or, for a smoky flavor, try it with fire-roasted diced tomatoes (or your favorite variety). I also like to cut up a fresh tomato for garnish, too!
- Cheese: Since this is cheeseburger tortellini, I had to add lots of cheese! I used sharp cheddar, but feel free to use your favorite kind of cheese or a blend of your favorites!
- Pickles: Add some diced dill pickles (along with fresh tomatoes) as a garnish for a pop of color and extra flavor. Just like pickles on a burger, I love the tangy crunch they bring to this pasta dish!
Can I Use Frozen Tortellini In One Pot Cheeseburger Tortellini?
Yes, you can use frozen tortellini in this recipe! It might take a little longer to cook than fresh tortellini. When you add it to the pot, just follow the same steps but give it about 1-2 extra minutes to cook all the way through. Make sure to stir it sometimes so it doesn’t stick. I like to taste a piece to see if it’s done. Frozen tortellini will work great and still give you a delicious one-pot meal!

How To Store & Reheat Cheeseburger Tortellini
Once cooled to room temperature, store cheeseburger tortellini leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. (If freezing the tortellini dish, the sauce may separate a bit when thawed, but it will still be delicious!). Reheat on the stovetop over medium-low heat or in the microwave, adding a splash of broth or milk if needed. If frozen, thaw in the refrigerator before reheating.
One Pot Cheeseburger Tortellini
Ingredients
- 1 pound ground beef
- ½ yellow onion, diced (about ½ cup)
- 2 tablespoons hamburger seasoning
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes, optional
- 2 teaspoons garlic, minced
- 1 ½ cups (12 ounces / 360 g) beef broth
- 1 cup (238 g) heavy cream
- 1 can (14.5 ounces) petite diced tomatoes, drained
- 1 package (20 ounces) refrigerated cheese tortellini
- 2 cups (226 g) sharp cheddar cheese, shredded
- finely diced dill pickle, for garnish (optional)
- freshly diced tomatoes, for garnish (optional)
- fresh parsley, chopped for garnish
Instructions
- To a large skillet over medium-high heat, add ground beef and onion. Cook, breaking up the beef as it browns (6-8 minutes). Drain any excess grease if needed.
- Reduce heat to medium. Season with hamburger seasoning, salt, pepper, and red pepper flakes (if using).
- Add garlic. Cook for one minute.
- Pour in the beef broth, heavy cream, and tomatoes, stirring to combine.
- Add tortellini. Cover and simmer for 6-8 minutes, stirring occasionally to prevent sticking, or until the tortellini is cooked through.
- Remove from heat. Add cheese, stirring until melted.
- Garnish with diced pickles, fresh tomatoes, and parsley. Serve hot.
