Breakfast Hand Pies
These hand pies are like a bacon, egg, and cheese biscuit. But, all the delicious breakfast foods are sealed inside the biscuit and cooked in an air fryer. And, don’t forget about the onion seasoned butter that is melted and brushed on top. It adds just a hint of onion flavor to complement the onions in the eggs.
Breakfast Hand Pies Ingredients
Biscuits: I used storebought biscuits in this recipe. So, you still get the biscuit as you would in the popular breakfast sandwich, but in a pocket.
Bacon: You would not necessarily need to add bacon if you choose to leave it out, but you could bake the bacon ahead of time to use when you are ready to make the hand pies. To bake bacon, simply place the strips onto a baking sheet lined with aluminum foil. Bake for 18-20 minutes at 415°F. That’s it! The bacon comes out crispy with easy clean-up. When it’s cool enough, crumble it into pieces to use in these hand pies. (You can use any meat you prefer!)
Onion Powder: Onion powder is added to melted butter to brush on the tops of the hand pies. It gives just enough flavor to the breakfast pies. If you don’t have onion powder on hand, make your own onion powder here. Onion salt is different than onion powder because it contains salt. Onion powder gives you that onion flavor without added salt.
To get started with the hand pies, cook the onions and eggs. In a medium skillet, heat up the oil and cook the onions until they are translucent. Then, add the beaten eggs. Leave the eggs undisturbed for a few seconds to let the bottom of the eggs cook.
Drag a spatula down the middle of the eggs to expose the bottom of the skillet and allow uncooked egg to run into the exposed surface. Continue in this matter until the eggs are cooked, or until the eggs are no longer runny. Remove the eggs from the heat, season with salt and pepper, and continue with the recipe.
How to Make Breakfast Hand Pies
With the eggs ready and the bacon cooked and crumbled, it’s time to get the hand pies made. First, remove the biscuits from the can and roll each of them out to a circle about 1/8-inch thick. Next, evenly distribute the eggs onto each flattened biscuit, leaving some room around the edge. Top each with a quarter cup of cheese and some crumbled bacon.
Then, wet your finger with water and rub it around the rim of each biscuit. Fold each over into a half-moon shape, pressing the edges to seal it. When ready, spray the basket of an air fryer with nonstick cooking spray. Place a few of the breakfast pockets into the basket, spraying the tops with cooking spray. Air fry the hand pies for about 5 minutes at 360°F. Flip them over and air fry them for another 4 minutes.
While the breakfast hand pies are cooking, mix together the melted butter, onion powder, and parsley in a small bowl. After the hand pies are done cooking, remove them from the air fryer and brush each with the onion butter. Put the hand pies back into the air fryer to cook one more minute. Remove them from the air fryer and serve hot with a side of salsa or ketchup.
Can I Make Breakfast Hand Pies in the Oven?
Yes! If you don’t have an air fryer, simply follow the directions as written. But, instead of placing the hand pies in the air fryer, use the oven. Preheat it to 350°F, place the hand pies on a baking sheet, and bake for 10 minutes when the oven is heated. Don’t forget to brush on the onion butter in the final minute of cooking!

- 1 tablespoon vegetable oil
- 1 small onion, diced (approximately 1 cup)
- 6 large eggs, beaten
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 can (8 count) Pillsbury Grand biscuits
- 2 cups sharp cheddar cheese, shredded and divided
- 6 slices bacon, cooked and crumbled
- ¼ cup (½ stick or 57g) butter, melted
- ½ teaspoon onion powder
- 1 teaspoon parsley
In a medium skillet, heat oil over medium heat. Add diced onions and cook until translucent (about 5 minutes).
Add lightly beaten eggs. As eggs begin to set, gently pull the eggs across the pan with a spatula. Repeat this process occasionally until no visible liquid egg remains. Remove from heat, season with salt and pepper, and set aside.
Remove the biscuits from the can and place them on a clean work surface. Using a rolling pin, flatten each biscuit to about 1/8-inch thickness.
Evenly distribute the eggs on top of the flattened biscuits, leaving room around the rim of the circle. Top each with 1/4 cup of shredded cheese and crumbled bacon.
To fold the biscuits, wet your finger with water and rub it around the rim of each biscuit. Fold each into a half-moon shape, sealing it. Using a fork, press the edges together to bind the seal.
Spray the basket of your air fryer with nonstick cooking spray. Working in batches, place the pockets in the basket. Spray the tops of the pockets with cooking spray.
Air fry at 360°F for 5 minutes. Carefully turn over the pockets and air fry for another 4 minutes.
As the hand pies are cooking, prepare the butter topping. To make the topping, combine the melted butter with the onion powder and parsley in a small bowl.
When ready, use a pair of tongs to remove the hand pies from the air fryer. Brush the melted butter on top of each one. Place the hand pies back into the air fryer to cook one additional minute.
Remove the hand pies from the air fryer. Serve with ketchup or salsa.
