What Is Cowboy Mayo?

Cowboy Mayo is my homemade sandwich spread. It is made with the bold flavors of my Cowboy Butter, like garlic, herbs, lemon, and a little spice, but with a creamy mayonnaise base. It’s rich, zesty, and perfect for adding big flavor to sandwiches, wraps, burgers, and more! Plus, I love it as a dip for fresh vegetables, too.

Ingredients & Substitutions

  • Bread: I used white sandwich bread for the club sandwiches. But use your favorite bread, like my simple sourdough bread, for even more flavor and crunch.
  • Cowboy Mayo: The cowboy mayo sets this club apart from other club sandwiches. Once you try it on this sandwich, you will want to use it on all sorts of foods! I recommend it for burgers, as a dip for your vegetables, or grilled meats, just to name a few.
  • Deli Meats: I used sliced turkey and sliced ham for this club sandwich. I like oven-roasted turkey and smoked ham, but any variety works. It is also a great recipe to use up leftover turkey or ham and add it to my list of leftover turkey recipes! Don’t have both? Simply double up on one or use your favorite deli meat.
  • Lettuce: Crisp romaine adds a fresh crunch that stays crisp in the sandwich. You can also use iceberg or butter lettuce if you like.
  • Tomatoes: Fresh tomato slices add juiciness and a little sweetness to balance the savory meats. Roma tomatoes work great, but you can use any ripe tomato you like.
  • Bacon: I love crispy bacon on my club sandwiches. Check out how to bake bacon for perfectly crispy bacon and easy clean-up every time!
  • Cheese: To me, sharp cheddar brings the most flavor to the club sandwich. I don’t want it to get lost in there! But you could try it with provolone, pepper jack, or your favorite kind of cheese.

What Is a Club Sandwich?

A club sandwich is a classic, layered sandwich made with toasted bread, sliced turkey or chicken, bacon, lettuce, tomato, and mayonnaise. It usually has three slices of bread and is cut into quarters, held together with toothpicks. The club sandwich is a popular choice for lunch or dinner, known for its hearty size and delicious mix of flavors. Variations often include different types of meats, cheeses, and spreads, like my homemade Cowboy Mayo, to add extra flavor. What Bread Is Best For A Club Sandwich?

The best bread for a club sandwich is sturdy, toasted sandwich bread that can hold up to layers of turkey, ham, bacon, cheese, and vegetables without getting soggy. (I want it crispy for every bite!) Classic white sandwich bread like my Amish white bread or simple white bread recipe, is a favorite because it’s soft yet strong when toasted. But whole wheat, sourdough, or rye breads (try my pumpernickel bread) are also great choices if you want more flavor and texture. Toasting the bread adds crunch and helps keep your sandwich deliciously crisp with every bite.

What To Serve With A Cowboy Club Sandwich

Yes, this sandwich can fill you up on its own, but I like to serve it with a side dish to make my lunch or dinner feel complete. Here are a few of my favorites:

Can I Make the Cowboy Club Sandwich Ahead of Time?

You can prepare the ingredients ahead, like cooking the bacon, slicing the meats and vegetables, and making the Cowboy Mayo. However, it’s best to assemble the sandwich right before eating to keep the bread toasted and the lettuce crisp. If you need to make it in advance, wrap it tightly in plastic wrap and store it in the refrigerator, but expect the bread to soften a bit.

How To Store A Club Sandwich

To keep your Cowboy Club Sandwich fresh, wrap it tightly in plastic wrap or place it in an airtight container. Store it in the refrigerator and eat within 24 hours for the best taste and texture. Because the sandwich has toasted bread and fresh ingredients like lettuce and tomato, it’s best enjoyed soon after making to avoid sogginess. If you need to store it longer, keep the components separate and assemble just before eating.

Cowboy Club Sandwich

Try the Cowboy Club Sandwich, a flavorful triple-decker with turkey, ham, and my delicious homemade Cowboy Mayo!

Ingredients

  • 6 slices white sandwich bread, toasted
  • ½ cup Cowboy Mayo
  • 8 ounces sliced deli turkey
  • 4 leaves romaine lettuce
  • 2 roma tomatoes, sliced (about 4 slices per tomato)
  • Kosher salt and ground black pepper, to taste
  • 8 slices bacon, cooked crispy
  • 4 slices deli ham
  • 2 slices sharp cheddar cheese

Instructions

  • Lay all six slices of the toasted bread flat on a cutting board. Spread 1 tablespoon of Cowboy Mayo on one side of each slice.
  • To build the first sandwich, place one slice of bread, mayo-side up, on a clean surface.
  • Top with half of the sliced turkey, one romaine lettuce leaf, and 4 slices of tomato. Lightly season the tomato slices with kosher salt and black pepper.
  • Place a second slice of bread on top, mayo-side down. Spread 1 tablespoon of Cowboy Mayo on the top side of this slice.
  • Layer four slices of bacon, two slices of ham, one slice of cheddar cheese, and another romaine leaf.
  • Place the third slice of bread on top, mayo-side down. Press down gently to compact the sandwich.
  • Secure the sandwich with four toothpicks, placing one near each corner. Carefully cut the sandwich diagonally into quarters.
  • Repeat the steps to assemble the second sandwich.
  • Serve immediately.
