Ingredients & Substitutions

  • Onions: I love using yellow onions for caramelizing. They have a little sweetness and a depth of flavor. If you don’t have yellow onions, sweet onions (like Walla Walla or Vidalia) or shallots would work.
  • Red Wine: For added richness and to bring out the onion flavor, I added 1/4 cup of red wine to the sauce. It will be cooked until it evaporates. If you don’t have any, or simply don’t want to use wine, you could use beef broth instead.
  • Beef Broth: Beef broth is the savory flavor of the dish. Chicken broth would also work, but it is a little less rich option.
  • Gnocchi: I used potato gnocchi for this recipe. It is small, soft dough dumplings. It is a type of pasta that is typically made from a combination of potatoes, flour, and sometimes eggs. If you want to try making homemade gnocchi, I have a simple recipe for it that you can find in my corn and sausage gnocchi post (which is another delicious recipe you might want to try).
  • Gruyere Cheese: Gruyere has a nutty flavor and melts beautifully! If you can’t find Gruyere, you could use Swiss cheese, Fontina, or Monterey Jack.

  1. Why don’t you include how many servings your recipes make? I always like to know this before I start making the recipe. It really helps a lot. Thank you

This was so flavorful, it was a burst of flavor in every single bite. Very filling and didn’t need any meat. I just added 1 cup of sliced mushrooms during the last few mins of saute’ing the onions. even my very fussy granddaughter loved it👍😋

  3. I can make this with a can of soup and prepackaged gnocchi. I thought it would have the recipe to make the gnocchi!

    1. So sorry this recipe didn’t meet your expections. I think it would be far less exciting with a can of soup.
