Ingredients & Substitutions

  • Potatoes: Look for baby potatoes to use, then wash and cut them in half. If using larger potatoes like Russet, Yukon gold, or red potatoes, try to cut them as close to the same size as you can. Then, adjust the baking time as needed.
  • Parmesan Cheese: Freshly grated parmesan is best (as compared to the pre-cut variety). You will use half of it in the potato coating and reserve the other half for sprinkling over the freshly roasted potatoes.
  • Oil: I prefer using extra virgin olive oil for its flavor, quality, and high smoke point. Regular olive oil, canola oil, or vegetable oil would also work.
  • Seasonings: Minced garlic, kosher salt, paprika, and black pepper are added to the parmesan and oil mixture.

What To Serve With Garlic Parmesan Roasted Potatoes

These roasted are so flavorful, you will be tempted to eat them all before you even serve them! (At least, that was true for me…) But, they would go well with so many main dishes. Here are a few I recommend:

  1. Grilled or roasted meats (like shredded chicken, steak bites, baked pork chops)
  2. Air Fryer Blackened Salmon
  3. Magic Meatloaf
  4. Roasted vegetables (like asparagus, Brussels sprouts, or green beans)
  5. Crusty bread (French baguette or Ciabatta)
  6. Easy dinner rolls
  7. Focaccia breadsticks

How To Store Garlic Parmesan Roasted Potatoes

To store these roasted potatoes, first, let them cool completely. Next, keep them in an airtight container in the refrigerator. They will last up to 3-4 days. For the best results (and to crisp up the potatoes again) reheat them in the oven. You can use the microwave, but that may make them softer (but still good)!

Can I Freeze Roasted Potatoes?

Yes, you can freeze these garlic parmesan roasted potatoes. First, let the potatoes cool completely. Next, place them into a single layer on a baking sheet and into the freezer for an hour or two. Once frozen, store the potatoes in an airtight freezer bag or container. Label and date the container; they will last up to 2-3 months. When ready, reheat the potatoes directly from frozen or let them thaw in the refrigerator before reheating.

    1. I haven’t tried these in the air fryer, but I would assume it’s the same temperature and similar timing. 🙂
