Ingredients & Substitutions

Beef: Look for a tender cut of meat like top sirloin, sirloin tips, or beef tenderloin. It will be cut into bite-sized pieces and seasoned with salt and pepper. You could also try this recipe with other cuts of meat like ribeye, filet mignon, or New York strip.

Onion: A yellow onion is diced and sauteed in butter as the sweet and savory base of the sauce.

Beef Broth: Beef broth is the liquid base of the sauce. Then, it is combined with Worcestershire sauce and soy sauce for more depth of flavor.

Slurry: Cornstarch and water are mixed to create a slurry. This is added to the sauce as a thickening agent.

How Can I Check My Steak For The Correct Level Of Doneness?

When browning the steak, it is your preference when it comes to how ‘done’ you want the steak. To determine doneness, check the color of the steak, aiming for pink for medium-rare, pinkish-red for medium, and pinkish-brown for medium-well. Additionally, use the touch method; a rare steak feels soft, medium-rare slightly yielding, medium firmer with bounce, and well-done very firm. Or, use a thermometer to check the temperature of the steak bites. Here is breakdown:

  • 120°F to 125°F = Rare
  • 130°F to 135°F = Medium Rare
  • 140°F to 145°F = Medium
  • 150°F = Medium Well

How To Store Steak Bites and Onion Garlic Sauce

To store the steak bites, first, let them cool to room temperature. Next, store the steak and sauce in an airtight container in the refrigerator. They will last up to 3-4 days. Reheat them in a skillet over medium heat or in the microwave.

Steak Bites and Onion Garlic Sauce

Steak Bites and Onion Garlic Sauce are tender, seasoned cubes of top sirloin, browned to perfection and smothered in a flavorful onion garlic sauce. Serve the beef and sauce over a bed of egg noodles, mashed potatoes, or rice for a hearty, delicious dish!

Ingredients

  • 1 ½ pounds top sirloin, sirloin tips, or beef tenderloin, cut into 1-inch cubes
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon vegetable oil
  • 3 tablespoons unsalted butter
  • 1 small yellow onion, diced (about ½ cup)
  • 2 teaspoons garlic minced
  • 2 ¼ cups (18 ounces / 540 g) beef broth
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon soy sauce
  • ¼ cup cold water
  • 3 tablespoons cornstarch
  • parsley, chopped for garnish

Instructions

  • Pat the cubes of beef dry with paper towels. Season evenly on all sides with salt and pepper.
  • To a large skillet over medium-high heat, add oil. Once hot, add the beef in a single layer. Depending on the size of the skillet, you may need to work in batches. Cook for 3-5 minutes, stirring occasionally, until browned on all sides. Transfer the browned beef to a plate and tent with aluminum foil to keep warm.
  • Reduce the heat to medium and add butter. Once melted, add the onions. Cook for 3-5 minutes, stirring occasionally, or until softened. Add garlic and cook for 1 more minute.
  • Add beef broth, Worcestershire sauce, and soy sauce. Stir to combine, scraping up the browned bits in the skillet.
  • In a small bowl, whisk the water and cornstarch together. Slowly drizzle the cornstarch mixture into the skillet, whisking constantly. Bring the mixture to a boil.
  • Once boiling, add the meat (and any juices from the plate) back into the skillet. Reduce heat to low. Simmer for 5 minutes, or until heated through*.
  • Garnish with chopped parsley. Serve warm with egg noodles, mashed potatoes, or rice.

Notes

*After adding the steak bites to the sauce, just simmer until heated; do not overcook or the steak will get tough.
