Lasagna Soup with Tortellini features a blend of ground beef and Italian sausage with a rich tomato base, cheese tortellini, and three kinds of cheese. Plus, it is a one-pot meal for easy preparation and clean-up! This is based on my Lasagna Soup with a fun cheesy pasta twist!
Ingredients & Substitutions
Meat: I added both ground beef and ground Italian sausage to the soup. You could use all of one kind of meat if preferred. Or, substitute ground turkey for ground beef for a leaner option.
Marinara Sauce: Choose your favorite brand of store-bought marinara sauce. Or, make homemade marinara sauce. I also have a Five Cheese Marinara Sauce that would be delicious!
Tortellini: This recipe calls for fresh cheese tortellini, but you could experiment with other varieties of tortellini. I would love it with spinach and ricotta or mushroom tortellini, too! If using dried tortellini, adjust the cooking time according to the package instructions.
Cheese: It’s a triple threat of cheeses in this soup with three different kinds of cheese added. I used mozzarella, romano, and parmesan for cheesy goodness! Have a little extra parmesan cheese for garnish!
What To Serve With Lasagna Tortellini Soup
Although this is a filling and hearty soup, it goes well with a variety of side dishes. Here are some of my favorites:
- Garlic Breadsticks or Garlic Knots
- Slices of French Baguette
- Wedge Salad
- Grilled Cheese Sandwich (cut into smaller pieces for dipping or cut into cubes for grilled cheese croutons)
- Focaccia Bread
- Roasted Vegetables (asparagus, green beans, or Brussels sprouts)
Can I Make The Soup In A Slow Cooker?
Yes, you can make this in a slow cooker, but you do need to brown the ground beef and sausage first. After cooking the meat, add it to the bowl of a slow cooker. Then, add all of the other ingredients besides the tortellini and three cheeses. Cover and cook on low for 3-4 hours. In the final 10 minutes of cooking, add the tortellini and cook until tender. Before serving, stir in the cheeses, allowing them to melt into the soup.
How To Store Lasagna Soup with Tortellini
To store tomato tortellini soup, first, let the soup cool completely. Next, store it in airtight containers in the refrigerator. It will last up to 3-4 days. Reheat the soup on the stovetop or in the microwave.
Lasagna Soup with Tortellini
Ingredients
- 1 tablespoon extra virgin olive oil
- 1 pound ground beef
- ½ pound ground Italian sausage
- 1 medium yellow onion, diced (about 1 cup)
- 1 tablespoon garlic, minced
- 1 tablespoon Italian seasoning
- 2 teaspoons kosher salt
- 2 teaspoons ground black pepper
- 1 jar (24 ounces) marinara sauce
- 4 cups (32 ounces) beef broth
- 1 can (28 ounces) crushed tomatoes
- 1 bag (20 ounces) fresh cheese tortellini, refrigerated
- ½ cup heavy whipping cream
- 1 cup (113 g) mozzarella cheese, shredded
- ½ cup (50 g) romano cheese, shredded
- ½ cup (50 g) parmesan cheese, shredded
- parmesan, grated, for garnish
- fresh parsley chopped, for garnish
Instructions
- To a large pot over medium heat, add oil.
- When the oil is hot, add ground beef, Italian sausage, onions, garlic, Italian seasoning, salt, and pepper. Cook, stirring occasionally and breaking up the meat as you go, for about 8-10 minutes, or until the meat is no longer pink. Drain excess grease if necessary.
- Pour in the sauce, beef broth, and crushed tomatoes. Stir to combine and bring the soup to a simmer.
- Once simmering, add tortellini and cook for 5 minutes or until tortellini is cooked through, gently stirring occasionally to avoid breaking the tortellini.
- Reduce heat to low. Add in heavy cream and cheeses, stirring until the cheeses are fully melted.
- Garnish with parsley. Serve warm with extra parmesan cheese.
